Rossafina Pizza Bianca
Sometimes the finest tasting dishes are those that rely on just a handful of ingredients. This simplicity allows each flavour to come through distinctly, elevating even the most straightforward recipes to a level of sophistication that is often underestimated. In this recipe, a basic pizza is taken to new heights by grilling the Rossafina, which intensifies its flavour and transforms the overall dish.

Ingredients for 2:
200 g Pizza Dough
160 g Rossafina
2 tbs. Olive Oil
1 Onion Sliced
A few Olives
2-3 garlic cloves
3-4 tbsp. Olive Oil
2 tbsp. Capers
Marjoram leaves to garnish
Method:
Divide the dough into four equal pieces and roll out in a little flour and semolina until 4-5 inches in diameter. Cook in apre-heated oven for 3-4 minutes until almost cooked, turn over if necessary.
Finely slice the onions and cook in ½ the Olive Oil until nice and crispy, cook the thinly sliced garlic cloves in the remainder of the oil and once done, turn out the garlic on to kitchen paper, reserving the oil.
Once the cooked bases are out of the oven, layer up the ingredients randomly over the four bases.
Place back on the tray and cook in the oven for 3-4 minutes.
Place onto the serving plate and garnish with the Marjoram leaves. Drizzle with a little more of the reserved garlic oil if desired.
