Midnight Plum heritage corn salad
This salad is centred around the distinctive Rainbow Plum tomato, which serves as the primary ingredient and the focal point of the dish. The supporting ingredients contribute their own unique flavours and textures, complementing the Rainbow Plum without overshadowing its presence. Ultimately, the Rainbow Plum remains the hero of the dish, anchoring the salad and providing its characteristic taste, texture and appeal.

Ingredients for 2:
200 g Rainbow Plum
1 Whole Corn on the Cob
½ Red Pepper
½ Red Onion
Pinch of Pea Shoots
½ Lime
Olive Oil
Method:
Remove the corn form the cob and roast in a hot pan with a little salt and Olive Oil. After 2 minutes, remove form the pan anddrain on some kitchen paper.
Cut the Rainbow Plums into ¼’s and remove the eye from them, place into a bowl.
Cut the red pepper into 1 cm squares and place into the same bowl with the Rainbow Plum.
Slice the red onion vert thinly and add to the bowl. Now mix this all well together, check the seasoning.
Once you are happy with the taste, turn out into the serving bowl and garnish with the fresh pea shoots.
